Peanut Butter Mousse
Ingredients:
1/2 envelope gelatin
1/4 cup cold water
6 oz peanut butter
1/4 cup sugar
1/2 cup cream
1 1/4 cup cream
Dissolve gelatin in cold water and set
aside.
Bring sugar and 1/2 cup cream to a boil
and pour over peanut butter. Stir until smooth.
Add gelatin to peanut butter mixture and
let cool until slightly thickened.
Whip remaining cream until stiff. Fold
into peanut mixture.
Divide amongst 6 serving cups and refrigerate
until set.
